Getting to know the gastronomic tradition of Athienou #EduTourism
Athienou, Cyprus has a long tradition of baking, which is included in the UNESCO National List of Intangible Cultural Heritage and is famous for its widely called round “common bread” of Cyprus.
Its main ingredients are local flour from which only the pith, water and salt are removed. At the same time, the making of the bread is linked to social and religious practices, which are still maintained today mainly by the women of the communities, as learned from their mothers and grandmothers.
This tradition continues today and is presented in the restored flour mill and in the modern Kallinikio Municipal Museum of Athienou. The museum and the activities it offers are aimed at school groups, families and children, as well as students/researchers.
As far as students and school visits are concerned, the educational programmes are adapted to their needs in order to ensure the creation of a unique museum experience.
The traditional Athenian wedding lokumi is included in the UNESCO National List of Intangible Cultural Heritage. It resembles a kourabie and is traditionally offered as a treat to wedding guests in Cyprus. In Athienou the producers continue to preserve the traditional recipe with pure ingredients. The lokoumi contains local wheat flour, semolina, baking powder, butter, butter, cinnamon stick juice, rose essence and brandy. Roasted almond nuts with cinnamon are placed in the middle. Today, loukoumi is produced by at least seven craftsmen, confectioners and industries in Athienou.
Athienou is also known in Cyprus for its dairy industry and the various cheeses and dairy products made with local milk, including the traditional Halloumi and anari. Visitors to the village can watch various cheese producers making Halloumi and anari while live demonstrations are also organised at the restored House of Father Kallinikos Stavrovouniotis. Finally, Athienou has always been known for the production of kefalotyri and kaskavaliou.
